Creamy Macadamia Shrimp
1 pound of raw shrimp, peeled and de-veined
1 shallot, chopped
1/4 teaspoon kosher salt (or more to taste)
1/2 cup macadamia nuts
1 tablespoon unsalted butter
2 tablespoons coconut milk
Fresh lime juice to taste
Instructions: Puree the shallots, nuts, & salt until creamy. Saute shrimp in butter (NOT MARGARINE a.k.a. POISON). Add coconut milk, cook a little longer, & top it off with a squirt of lime juice and leftover chopped nuts.
