Quick Tuna and Garbanzo Salad
Two Zone 3-block servings
Ingredients:
- 1 (6oz) can tuna in water, drained
- 1 1/4 cups garbanzo beans
- 1/2 cup finely chopped celery
- 1/3 cup finely chopped onion
- 1 tbs chopped fresh parsely
- 1 tomato, diced
- 2 tsp olive oil
- 3 tbs balsamic vinegar or lemon juice
- 1/4 tsp salt
- 1/4 pepper
Instructions:
In a bowl, stir to combine all ingredients except tomato. Then add tomato and stir gently. This can be made the night before or in the morning before you leave for work or etc. It is a favorite of Ryan’s and he will usually bring this to work 1-2 times a week.
