Recipe of the Day: Almond Encrusted Salmon Cakes
What you need: 1 lb cooked salmon, 2 eggs, lemon, dill, handful of almonds, olive oil or butter, salt.
How to make this: Mix the cooked salmon with 2 beaten eggs. Add some chopped dill & parsley. Add a little lemon juice or some lemon zest (for more flavor). Don’t add too much juice or your patties will be too soggy – this is why lemon zest works better.
Pulverize your almonds into dust. If you have a mortar & pestle – use it; otherwise put your almonds in a brown bag and beat on them with something heavy like I did. Warm up your olive oil or butter at medium heat.
Create little hamburger sized patties from your mixture and then coat each side with the almond dust we just made. Cook the patties on each side until golden brown and serve with lemon/parsley.
